I need to apologize – yet again – for the silence. Many of you have called, written, emailed and stopped by and we have been very careful and cryptic in our responses. I admit it – I’m superstitious. I wasn’t willing to say anything until the ink was dry (and didn’t disappear!). So we’ve waited. And waited. And listened to rumors. And waited. We even banged our heads against a few walls – but we waited.
Well, the waiting is over and here’s the NEWS!
For 50 years Kaufman Bagel & Delicatessen has been a member of the Skokiecommunity – 28 of those years owned by the Dworkin family but only as renters. We have finally closed on the property, completed our financing, (thank you to the team at First Merit), the insurance proceeds are en-route and we have our permits (thank you to the Village Elders). I think all the actors are finally on the stage. If you happen to drive by you’ll soon see the construction fences, trucks, haulers, cranes, backhoes, plumbers, electricians, masons, glaziers, carpenters. It’s game on !
We’re shooting for a September opening. There will be big changes in the store when we re-open – more seating, an open, airy feeling, new display space. But remember – the most important thing will not change – we’re comin’ back with the same great, high quality food. That’s our promise.
We thank you for your patience, your wishes and your support. Stay tuned now for updates – they’ll be coming fast & furious.
And yes, we know, you’re really, really hungry!! We’ll see you soon !

Dear Customers,
Please forgive the ‘radio silence’ and lack of updates on our website; it’s a bit tough to give everyone an update when there isn’t much solid information to share. We would like to thank you all for your calls, good wishes and prayers over the last 2 ½ months; this has been a challenging time for us. I would also like to personally apologize for my own ignorance when I said, the day after the fire, we would re-open in a few weeks…. little did we know.
We have been planning, negotiating, arguing and talking to the landlord, the Village, the banks and the insurance company. We believe, while there are still many pieces that must fall into place, we are getting closer. It has been a slow uphill battle, frustrating with roadblocks at many turns – but we do keep moving forward with baby-steps and are making headway.
At this point our re-opening looks to be sometime in May. As the parts of the puzzle fall into place we will continue to up-date the site. Your support and well wishes strengthen our resolve to keep looking ahead. We apologize for the amount of time it is taking.
We look forward to welcoming you back soon! We miss you all.
