When it comes to corned beef, some like it fatty and some lean. At Kaufman;s you can have it oth ways. Unlike most delis, which serve only marbled slices, this Skokie institution will separate fat from the meat to order. They even sell slices of near pure fat, known as deckle. The bottom line: the more fat in the cut, the more profound the melt-in-your-mouth experience. Another Side of Skokie

In an unprepossessing little building not far from the Skokie Swift terminal, Kaufman's Bagel & Deli (4905 W. Dempster Street; 847 677 9880) has been selling bagels, baked goos and deli fare in its shop for 40 years. The sales figures for March show 7,000 pounds of corned beef, 1,300 pounds tuna salad, 43,000 bagels-- all baked and prepared on site. With a loyal customer base that considers itself the bagel cognoscenti and stretches as far as Oak Park, the bakery uses real butter, real sour cream, real fruit, and no preservatives, "just like Grandma used to," says owner Bette Dworkin.
Places to e a Glutton for GlutenThere's nothing chic or cool about this place - "no chocolate cherry bread here." But they do make "the best old-fashioned Jewish bagels and bialys. On the deli side there is a lot of yelling and commotion, while the bakery side is a little cleaner. This is the kind of place we grew up with. At Kaufman's Bagel & Deli in Skokie, some 44,000 bagels a month come out of the oven- not really so many when you figure it by the day, says Bette Dworkin, the firm's president
